One word keywords are great if your site is directly related to what you’re targeting. They are easy to rank for and it’s easy for users to figure out what your website is about based on a single keyword. The problem with one word keywords is that you need to write your articles in a way that will match exactly what someone would type into Google when looking for your particular topic. It can also be difficult finding blogs on topics such as healthy eating because there are so many different ways people think about nutrition and how it can affect them differently.
